
What are some of your favorite takes on Mac and Cheese.
Tonight I did something similar to this, except I replaced half the cheddar w/ a 50/50 mix of blue cheese and gouda.
I'm not sure I should admit this but I've never made anything that wasn't from the box :-(

Alton Brown's recipe does look good. Personally, I have an adult version of mac and cheese. At Thanksgiving it's a family favorite for many years. I use rotini or other shaped pasta instead of elbow macaroni. I also take a butternut squash and boil it, then puree it. That, along with noodles, velvetta cheese (1/2 block melted and shredded cheddar cheese get mixed together with half a stick of butter. Season to taste with salt, pepper and other spices in your cabinet that you like to use with pastas (oregano gives a unique and tasty flavor).
Take that mixture and pour it into a 9 by 13 baking dish. Cover with Italian bread crumbs and bake on 375 degrees for 25 mins.
Comes out with nice crust, soft gooey inside (the comfort food) and 1 and 1/4 cups of veggies per serving).
I love butternut squash lasagna.
I came really close to trying Alton's recipe.
Maybe try adding some bacon or diced ham to it.

Kielbasa's good in mac and cheese.
Last weekend I stayed in a cabin, and brought cheese and crackers for a snack. When I got home Sunday I wanted to make something quick and easy. I had a hodgepodge of cheeses that weighed 1 pound, which is what the recipe on the box called for.
I had a bit of aged cheddar, sharp cheddar, goat cheese, and part of a bag of some parmesan, mozzarella, and provolone mix in the fridge, so I used it all. I added some hidden valley ranch sour cream dip and then baked it with sourdough bread crumbs. Never had mac and cheese taste so good.
I love mac and cheese. It's one of my favorite foods when done right. But unfortunately it's terribly bad for your health, so I don't eat much of it.
Another hodgepodge of cheese Mac and Cheese is coming tomorrow. My fridge is overloaded with cheese right now.
I had way too much cheese in the fridge, so I did a mac and cheese and a couple days later a grilled cheese. I had some 3 year cheddar, sharp cheddar, mozzarella, and swiss. Good mac and a good grilled cheese. Did the sandwich on sourdough with aged cheddar and mozzarella.
